New Recipe – McDonald’s Knock Off Chicken Snack Wraps
It’s been a busy week, and it’s also been a hot minute since I’ve shared a fun new recipe with y’all, so I thought I’d take the opportunity to share one today. This is once again another recipe Dan and I came across while scrolling through Instagram and it was really easy and super tasty.
I don’t think McDonald’s has them anymore, but they use to have these Chicken Snack Wraps that were pretty good, and we found a knock off version of them so we can make them at home whenever we want. Bonus! I actually remembered to take a photo of the final product this time, so if you’re into that, then you’re welcome. 😉
First of all, you will need the following ingredients for your snack wraps:
- 1 pound of chicken breasts – or chicken tenderloins. (If you get chicken breasts, you’re going to cut them into thinner strips anyway.)
- Spices: salt, pepper, garlic powder, onion powder, and paprika.
- Crushed cornflakes.
- 2 eggs
- Low Fat Mayonnaise. (Or Greek yogurt if you want added protein.)
- Ranch Seasoning.
- Shredded lettuce.
- Cheddar Cheese.
- Tortilla wraps.
Step one in the cooking process will be to cut your chicken into thin strips – about the size of a chicken tender – and coat with salt, pepper, garlic powder, onion powder, and paprika.
Then take roughly a cup of crushed corn flakes and add them to a bowl. You’re going to add the same spices (salt, pepper, garlic powder, onion powder, and paprika) to the crushed cornflakes and mix. In another bowl, whisk your two eggs together.
Take your seasoned chicken and dip into the eggs and then coat in a layer of the corn flake mixture. We usually use our air fryer to cook the chicken, if you have one, you’ll cook them at 375 degrees for 15-18 minutes, depending on how thick your chicken is. If you don’t have an air fryer, they can be cooked in the oven as well at 400 degrees for 20-25 minutes.
That’s the hardest part right there! The rest is super easy.
Just take a couple tablespoons of mayonnaise or Greek yogurt – we’ve always used mayo – and add to a bowl and sprinkle some ranch seasoning on top and stir.
Once the chicken is done cooking, you can place your chicken in your tortilla, top with the mayo mixture, lettuce, cheese, and whatever other toppings you want. And that’s it!
Super, super easy, delicious and filling. It makes a great quick dinner for a busy night – like basically every night we had this week! Hoping next week is a little less busy so I have some time to put more thought into a blog post, but until then, I’ve bought your patience with tasty food. 🙂
