New Recipe! BBQ Chicken Potato Skillet

It’s been a hot minute since I’ve shared a recipe on here, so I thought it would be a good time to do another one!

This one I got from the “Cooking in the Midwest” Instagram page. Which is honestly where I’ve gotten most of the recipes I’ve shared. 😇 If you haven’t checked it out, I do recommend it. We haven’t found a bad recipe yet, and he has a cookbook too if Instagram isn’t your thing.

Anyway, the recipe we tried most recently was this BBQ chicken potato skillet. Not only was it super easy, but it was really yummy too.

The ingredients you’ll need are:

1 pound of chicken breast

5 or 6 small or medium potatoes

Olive oil, salt, pepper, paprika, and garlic powder (for potatoes)

Ranch seasoning and onion powder

2 TBSP of butter

1 TBSP of minced garlic

1/2 cup of your favorite BBQ sauce

Mozzarella cheese

First step is you’re going to chop up those potatoes into cubes and add to a mixing bowl. Add olive oil, salt, pepper, paprika and garlic powder. Just eyeball these measurements and add as much as you see fit. Toss the potatoes until evenly coated with spices.

You’ll need an air fryer for this next step. Or if you don’t have one, you can toss them in the oven as well. In the air fryer, you are going to cook them at 400 degrees for 20-25 minutes, being sure to stir them every couple of minutes.

While those are cooking, you’ll cube up your chicken and add to your skillet with the butter. While it’s cooking, season your chicken with 1/2 teaspoon of salt and pepper each, and 1 tsp each of ranch seasoning, paprika, and onion powder.

When your chicken is no longer pink, add your garlic and bbq sauce. We tried a Memphis style BBQ sauce that made it very sweet which was very tasty. But any kind of BBQ sauce will do!

When the potatoes are done cooking, you’ll add them to your skillet and top with a layer of mozzarella cheese. You can then either cover your skillet until the cheese melts, or pop it into the oven and broil until it melts. Whatever is easier, they both work well.

And then you’re done! Super easy. We made some biscuits to go with it and it was very filling and delicious. And it heated up nicely for leftovers too. It’ll make for a quick easy meal for those busy weeknights, and it’ll be great once the weather starts cooling off too!

Might even be a good one to try on this long holiday weekend. 😉
